
Why lime honey tastes of mint
Single-origin honeys are made in the flower, not in the jar. A sensory round of seven — and what crystallisation gives away.
A single-origin honey means the nectar of one plant clearly dominates. That is possible because of flower constancy — a forager stays with the species she has learned as long as it yields.
Colour and aroma come from the source. Lime honey carries a cool, minty note, rape honey a mild and almost creamy one, heather honey an astringent note with a gel-like body.
Honeydew honeys — forest, fir, spruce — are not made from nectar but from the excretions of sap-sucking insects. They are dark, malty and stay liquid longer.
Fructose to glucose — and what it means for setting

The ratio of fructose to glucose governs crystallisation: more glucose, faster setting. Rape honey is solid within weeks; acacia honey stays clear for months.
Quality is decided before that: water content below 18 per cent, gentle handling without heat above roughly 40 °C, storage away from light. The rest is labelling.
